Goat cheese w/sun-dried tomatoes

Ingredients

12 oz goat cheese

3 T olive oil

1 C oil-packed sun-dried tomatoes (drained and diced)

1 C black olives (chopped)

4 T chopped basil

2 T chopped fresh rosemary

3 cloves garlic halved


Directions

1) Slice goat cheese into one inch pieces and place in a single layer on a large platter, sprinkle olive oin, sun-dried tomatoes, black olives, basil and rosemary over the cheese

2) Using toothpicks, insert the garlic cloves into each piece of cheese

3) Allow the mixture to marinate 6 hours, or overnight, in the refrigerator

4) Prior to serving, remove the toothpicks & garlic, and serve with sliced french bread
